A talk about delicious sake 'KosinoKanbai'1
Yokohama, in the past, from the port of Yokohama
which is the entrance of the sea of Japan,
Information and products from all over the world came in.
Because of that, I have been coffee, tea, cake,
Chinese cuisine since the age of 15,
Italian, French, Spanish, Swiss, Indian curry etc,
I liked overseas products.
That's why, beyond the age of 20, sake likes liquor, Scotch, Bourbon,
I drank Lamb, Jin, Vodka, Brandy, Sherry, Wine,
Even now, rum, Armagnac, Sherry and wine are always available.
At first, sake was not very fond of sweetness and irritation.
However, as a result of relocation to Niigata,
opportunities to drink local sake increased, I drank so far
With sake that is completely different from sake,
easy to drink sake, it began to drink.
Two years later, this time, I was relocated
to Nagano prefecture, and it is completely
different from Niigata's liquor with a totally different
dry richness I was supposed to go out for sake.
When examining the difference between sake
of Niigata and sake of Nagano, I found that
the degree of sake is different,
What is sake degree: sweet sake of sake.
It will be a standard to see the dry.
If the sugar content is high, it feels sweet,
and if the sugar content is small, it feels painful.
For sake degree, sugar content is negative,
while on the contrary, sugar content is low plus.
In other words, the higher the degree of negative, the sweeter it is,
The higher the degree of plus it means that it is dry.

I would like to introduce sake.
At first, I will introduce from the very famous Kosinokanbai
from among representative sake of Niigata.
越乃寒梅(こしのかんばい)- 石本酒造(新潟市江南区)
Kosinokanbai-IsimotoBrewery(Kounan Niigatacity)
Kameda village located nearly in the center of Niigata city. The sand dunes surrounded by the Agano River and the Shinanogawa River are the hometown of the Yoshinoku plum.
Kameda Township is a favorable place for sake making which is blessed with abundant good water with Agano river as a water system and winter snow which creates a low temperature environment.
Such Kameda village is also a famous place
of plum from the Edo period.
The field of "Fuji Goro plum" that puts great fruit in the early summer
is colored with pretty flowers in the snowfall of early spring.
This flower of plum that stands for cold and gives out a dignified
beauty is the origin of the name of Koshiro cold plum.
The people of Kameda village love sake and love plum.
Ishimoto Brewery continues to make Kosinokanbai in this place today.
"We will make sake that people of Kameda who
will do the farm work harder will be pleased."
Meiji 40, Ishimoto Brewery 's Kosinokabai was born
under such a rustic feeling.
Eventually, as attention became popular among
a number of gifts, the warehouse gained step by step.
However, the influence of the war that came in the Showa era
one after another was sent to the brewing industry
and Ishimoto Breweries, too, caused troubles such as
making it impossible to manufacture sake at one time.
Even after the end of the war, rigorous conditions continued,
such as rice is not available enough and limitations are
placed on the degree of milled rice.
Nevertheless, Ishimoto Breweries polished white white rice,
"I want to make sake that is pleasing
if only small amounts can be made."
Then, a period of high economic growth visited,
sake also headed towards mass production era.
Sweet mouth was preferred, it was an era
when it is built, but Ishimoto Breweries
I continued through "a good sake with a drinking mouth"
and kept making an amount commensurate
with the scale of the warehouse.
And until now, that attitude will not change.
Shogo, our second generation, compared the sake brewing to a boat
competition that he used to be a player at the time.
"Rowing hard all the way toward invisible goals,
as well as making sake."
Ishimoto Brewery continues to do
such sake making in the future.
