Daisekkei my favorite sake.
This time, I will introduce my favorite sake.
1:Daisekkei
Compared to Niigata's sake, it is dry, but it feels easy.
I did not get bored, it was an impression of delicious liquor.
Daisekkei is located in Ikeda Town in the middle
of the area called Azumino in Nagano Prefecture.
Speaking of Azumino, it is the origin of
the best apple in Japan: Azumino San Fuji.
It is the hometown of the
famous Wasabi called Daio Wasabi Farm.
It is a large area spreading at the foot of
the North Alps, it is also a granary zone.
Snow Gorge (Sekkei) is a zone where snow
accumulated in valleys and lakes of high altitude
places such as alpine remained undissolved.
Or a valley covered with snow cover.
Origin of the name of Daisekkei:
The brand "Daisekkei" was attached to
the scenery because one of the three
biggest snow rugs in Japan is in Hakuba-dake.
After all it's delicious !!
1:This is a praise, thankfully praise,
frequently praised by customers of Daisekkei.
1: "Sticking to the rice and water in Azumino area,
deliciously delicious sake that is loved by locals"
In our warehouse, we are also focusing on improving
the quality of sake that is easy to purchase.
Daiginjo etc., expensive liquor is delicious and reasonable.
Cheap liquor with a price such as
"jyosen・kuradasi" is delicious.
That's why other drinks at Daisekkei can say,
"Of course it is delicious!"
2: In the long history, we have received
the honor of Imperial Foundation sake,
we have repeatedly received many brilliant
awards, such as the highest gold prize etc.
And I think that you can also repeat
the words of "It is truly delicious!
Taste inherited and communicate:
The sticking to the spiritual alcohol quality of
the sake brewery of Daisekkei passed over
to successive brewers, Toji, the difference of
steady research and effort appears clearly
after 10 years from 5 years later.
Even though it costs, I will continue to explore
good sake, delicious sake, and I want
to see with a new feeling every year.
That spirit is constantly changing
in the sake of "Daisekkeii".
Long ago Grandpa and papa, the same aroma
and taste as drinker drunk every night.
Japanese sake in Japanese food culture
Sake is the sake that requires the most
complicated manufacturing process and
the highest production technology
among many sake in the world.
It would be very difficult for people
from overseas to imagine rice seedlings
from rice plants, rice grains and
transparent golden sake. Sake brewing is
a wonderful traditional culture that
our Japanese people are proud of.
And I think that you can repeat the phrase "It is truly.
"After all it is delicious!"
We are responsible for making sake,
responsible for making sake, and with pride
in my heart I love and appreciate a single grain
of drops (a single drop of water),
and I treasure it carefully with it .
And Kuramoto, we will continue to devote
our efforts to get the customer's smile
from now on again.
Rice mill:Starting out of Azumino,
we rice polished slowly and rice that
we raised with a great deal of farmers
in the prefecture's contract farmers.
Collection of storage:It is stored until it gets
drunk in a litter holding small temperature change.
Kojyo Room: A room to increase the koji
making rice, which becomes yeast rice,
to steamed rice. Aspergillus is easy to grow,
it is warm and humid. 1. Koji 2. Moto (liquor)
3. The more word we make, we carefully
care about the important koji.
The taste is sweet as the bites chew,
and it has a gentle scent like chestnut.
Koji for sake has almost the same
meaning as malt for whiskey.
Liquor room:Room to increase yeast
which makes alcohol.
If you raise a lot of healthy yeast,
sake will also be finished deliciously fine.
In the tank, steamed rice, koji, yeast,
water enter, add a paddle every day.
When it is fermented, the yeast's gas
Shuwashwa Pashapasha sounds and
a fresh scent like fruit make it a source of sake.
Bottling: Each bottle is packed and completed
into items that you reach at hand.
甑 (Koshike): A tool that polishes rice
carefully and steams washed rice.
The steamed rice is a fragrant smell which
can not be withheld, and when you eat,
the umami and sweetness spread in your mouth.
