Philip Harper (Philip Harper, 1966) is a British sake brewer
(Toji) who is active in Japan
Harper is a single immigrant immigrant in 2001
as a professor of the brewer who is a supervisor of a brewer
who brews sake, in 2001. Since 1991, he has worked in
numerous warehouses.
He hopes to extend the market of sake to various
parts of the world, including Asia, Europe and North America,
and to restore sake as a national and cultural drink of Japan.
Harper says two books "The Insider's Guide to Sake" about sake

Philip Harper was born in Birmingham, England,
England in 1966, and grew up in Cornwall State.
In 1988 he received a bachelor's degree in English literature
and graduated from Oxford University.
After graduation, I went to Osaka by
Japanese foreign language youth invitation project (JET)
and kept teaching English at public junior high school
and high school for 2 years.
Harper originally liked European drinks, but he met sake
in a banquet with teachers of his colleagues.
Eventually they joined the sake of sake lovers
and started drinking a bar in Osaka.

After finishing the contract term of JET, Harper decided to stay
in Japan, he started to work at an English conversation school at noon
and at a local bar in the evening. In 1991, he encountered Umenoyado Shuzo which is a brewer of a rural town in Nara prefecture.
Harper began to work as a worker who does anything here.
In the first year, I was in charge of the milled rice of brown rice,
and I operated the rice mill and bagged it.
In the second year, I learned how to make steamed rice.
In the third year, I was in charge of making koji
making fermented rice and making sake.
Harper worked in Umenoyado without a break every day during
the period of sake making from October to April for 10 years.
The master of the brewer gave Harper an opportunity to learn sake
brewing in the course and gave various materials to make
his knowledge deepen.
Harper married a Japanese woman shortly after she started
working at the sake brewery.
The day of the wedding ceremony was said to be
the only holiday of the decade that I worked at Umeno.
Harper published his first book "The Insider's Guide to Sake" in 1998. This book was written based on the experience of the time when I started drinking sake and started making it. This small book sold by more than 20,000 copies by 2008 contains information on sake of various categories such as "Nigori", "Daiginjo", "Ginjo", "Honjyozo".
This book is written for beginner level sake enthusiasts
outside of Japan, there are many pictures
and labels of various alcoholic beverages are included.
Harper becomes Toji of sake.
In 2001, Harper passed the qualification exam of the South Toji
Association and passed the title and got the title of "Toji"
who is the supervisor of sake brewing.
As a foreigner first and only one, becoming a precious title,
Toji, Harper left his name in the history of Japan.
In 2001, I left Umenoyado and moved to Daimon Brewery.
After that Harper worked at various brewers
in Ibaraki City and Kyoto City.
From experience in various breweries, Harper came to recognize
that sake needs to be widely known in order to survive
among liquor enthusiasts in the modern world.
To help it, he published the second book "The Book of Sake:
A Connoisseurs Guide" for sake lovers
inside and outside of Japan in 2006.
As with the first book, this book introduces traditional sake
of various kinds and flavors, but the contents are
for sophisticated readers more than before.
Later career
In 2008, Toji Kinoshita, who had been working for 45 years, died.
The master of the brewer thought about going out of business,
but recommended Harper,I decided to hire him as a master.
Harper, taking advantage of his own experience,
I made a new brand new.
This liquor was named "Lucky Bag" from a lucky bag sold
to New Year in Japan.
In 2009, Harper made excellent sake in Japan and
the United States I won numerous awards given.
Harper is continuing to make sake with Kinoshita brewing,
spreading it to the world of traditional sake,
I am praying for the revival of sake in Japan.
Harper's activities are documentary film directed by Konishi Mirai
in 2015. It was taken up largely in "Kanpai!
